I’m not sure about you, but I have a wicked sweet tooth. It’s very hard for me to pass on anything sweet, even though I’ve been trying really hard to exercise and eat right.
Last month I went into a Planet Organic Health Food Store and they had some cookie samples. YES! Healthy cookie samples. NO! However, I did try the sample and these cookies were delicious! You would never know they were a healthier choice, loaded with nutritional ingredients such as oats, raisins and seeds. I love baking my own cookies and decided to give them a try at home. I looked online, found the recipe, baked and tried them out on my kids. The verdict? They loved them! The ingredients to these cookies were very easy to find at either a regular grocery store or at a Bulk Barn. I’m including this simple recipe in this blog but you can find the original recipe here: http://www.food.com/recipe/planet-organic-cosmic-cookies-292060
Planet Organic Cosmic Cookies:
2 1/4 cups quick oats
2 cups spelt flour
1 cup sunflower seeds
3/4 cup pumpkin seeds
1/2 cup shredded coconut, unsweetened
1/4 cup flax seed
1 cup granulated unbleached cane sugar
1 tablespoon cinnamon
2 1/4 teaspoons sea salt
1 3/4 cups dark chocolate chips or 1 3/4 cups carob chips
1 1/4 cups rasins
1/4 cup water
1/4 cup blackstrap molasses
3/4 cup canola oil
1 cup soy milk
Preheat oven to 350°F.
Line two baking trays with parchment paper.
Combine dry ingredients : from oats to raisins.
Combine wet ingredients: from water to soy milk.
Stir dry and wet together until just combined.
Portion cookie dough using 1/3 C measure and place on baking tray.
Gently flatten cookies.
Bake for 24 minutes or until lightly browned.
These cookies were so tasty that they satisfied my sweet tooth, yet were healthier than regular cookies, which satisfied my desire to stay healthy. It’s also a perfect treat to slip into your child’s lunchbox.
I hope you give these guilt-free cookies a try and love them as much as I do! Enjoy!
